I often make this for company and it is always a hit. It is a basic, but tasty comfort food. The Dijon lends a tangy flavor balanced by the creaminess. This can be adapted to be more lowfat (see notes), but the full fat version is the best. Read more . A Joy of Cooking recipe Ingredients:
4 large baking potatoes, rubbed with olive oil, pierced and baked in a 400 degree oven for about 50 minutes |
1 cup shredded jack or sharp cheddar cheese |
1/2 cup sour cream |
4 slices cooked bacon or ham, chopped |
4 green onions, chopped |
2 t dijon mustard |
1/2-1 t hot red pepper sauce |
chives for topping |
note: substitute low fat cheese and sour cream and lean ham for a healthier version-- still good |
Directions:
1. Allow potatoes to cool a bit and cut a slit in the top of each 2. Squeeze the potato open and scrape out the filling, leaving about a 1/2 shell 3. It is fine to remove the top of the potato lengthwise to get to the pulp (like making a boat or canoe) 4. Mix the cooked pulp with the cheese mixture 5. Mound the filling into the potato shells 6. Place the stuffed potatoes into a greased baking dish 7. Bake about 15 minutes or until the cheese is melted 8. Sprinkle with chives 9. Enjoy |
