Differently Delicious Chocolate Cake |

Another different chocolate cake recipe I experimented with and was very well received by the family! Differnent types of chocolate flavor and textures are combined in this recipe. Ingredients:
2/3 cup cocoa powder |
3/4 cup boiling water |
1 1/2 sticks plain butter cut up, softened |
3 eggs |
1 tsp vanilla |
2 cups flour |
1/4 cup cornstarch |
1 1/2 cups sugar |
1 1/2 tsp baking soda |
dash salt |
1/2 tsp baking powder |
filling: seedless black raspberry jam or apricot preserves from a jar |
topping: your favorite bottle chocolate ice cream topping or chocolate sauce |
your favorite chocolate frosting or ganache for sides of cake |

Directions:
1. Combine boiling water with the cocoa and whisk smooth 2. Add butter and stir to melt and softenen butter and blend smooth 3. mixture will be thick 4. in another bowl combine, eggs, vanilla and beat to blend 5. Using an electirc mixer, combine remaining ingredients, add to the cocoa mixture and beat smooth 6. Place mixture in a cocoa dusted springform pan and bake in middle oven rack, 350F degrees until tested done in center with tooth pick 40 to 60 minutes or tested done 7. Cool in pan,but while warm drizzle with chocolate ice cream topping or chocolate syrup and sprinkle on some chocolate chips and use tooth pick to swirl chips into a pattern 8. Add jimmies to decorate if desired. 9. When cool remove sides of springform, cool completely and chill cake. 10. When cold slice cake in half horizontally, being carefully not to disturb top 11. Either spread bottom layer with seedless raspberry jam or apricot jam. 12. Place on top half of cake carefully 13. Make a favorite chocolate ganache or chocolate frosting and smooth around sides of cake and seal any separations. 14. Chill well but bring to room temperature before serving 15. Note: may be baked in two separate layer pans but I often use a springform to make one layer and then split it. which I find just as easy 16. Do what is easier for yourself! |
