A light tomato soup that i picked up at a cooking class i took. we all love it and I'm sure you will too. Ingredients:
2 med. onions |
4 cloves garlic crushed |
6 cups chopped and peeled tomatoes |
1 tablespoon sugar |
1 tablespoon vinegar |
3/4 teaspoon hot chili |
salt and pepper to taste |
4 cups chicken stock |
Directions:
1. Saute' onions and garlic in oil 2. add chopped tomatoes and saute' for 10 min. 3. add rest of ingredients and blend. 4. bring to boil and simmer for 1-11/2 hours. |
