Different but Delicious Grilled Cheese

This is an excellent variation on grilled cheese. You can substitute any kind of cheese that you like. This is just what I usually have on hand. Add as much cheese as you would like. Its a very flexible recipe!
Ingredients:
bread
cheese (american and colby jack is what i normally use)
tomato
chopped green onion
mayonnaise
sour cream (optional)
Directions:
1. Put mayo on one side of the bread and place in skillet on low to med-low temperature Add slices of cheese (I usually use two), slice of tomato, green onion (I use about 1 tbsp per sandwich).
2. Put sour cream on second slice of bread and place sour cream side down on top sandwich. Add mayo to the outside of the top slice of bread.
3. Press sandwich with spatula, helps to seal everything inches.
4. Brown both sides, cook slowly so cheese melts.
