Hard boiled eggs provide a differnt but delcious textire to this healthy veg filled soup of Sephardi origin Ingredients:
1, 46 oz bottle of tomato juice |
4 hard boiled eggs |
1 large sweet onion finbely chopped |
2 small bell pepperes, seeded and finely chopped |
1 english cucumber, peleed, seeded and finely chopped |
2 garlic cloves crushed |
1/4 cup fresh lime juice |
3 tbs extra virgin olive oil |
1 tbvs worcxhestershire sauce |
1 1/2 tsp yellow mustard powder |
hot sauce to taste |
crotons ( garnish ) |
Directions:
1. Separate hard cooked whites from the yolks. 2. in a bowl combine the yolks with oil and garlic and beat with wire whisk to a smooth paste 3. Add the lime juice, Worchestertshire sauce, hot sauce, mustard powder, and whisk to combine well 4. Mince the egg whites and add to the bowl 5. Add remaining ingredients ( except crotons ) and stir well 6. Cover and chill 7. Garnish bowls with soup croutons |
