Healthy Soup, great to have around for lunch and light dinner Ingredients:
2 teaspoons olive oil |
1 diced onion |
2 -3 boneless skinless chicken breast halves |
1 small red pepper |
14 ounces fat free sodium free chicken broth |
2 cups water |
1 rutabaga |
1 carrot |
3 stalks celery |
2 cups frozen green beans |
14 ounces no-salt-added diced tomatoes |
1 bouillon cube |
1/4 teaspoon garlic powder |
1/2 teaspoon black pepper |
Directions:
1. In a soup pot add olive oil, onion, chicken, red pepper and cover over a medium low heat, stir occasionally. 2. Dice rutabaga in very small cubes 1/2 inchx1/2 inch after removing the waxy outside. 3. Peel and dice carrot. 4. Once chicken starts to cook through, add in remaining indgredients. 5. Cover, let simmer for 1 hour. 6. Pull out chicken and shred or cube as desired then add back into the pot. 7. Serve. |
