I got this recipe from an old copy of Diabetes: Recipes for Health and made a few adjustments to it. This recipe is great for diabetics and people on diets. Ingredients:
3/4 cup egg substitute |
1/4 tsp cream of tartar |
3 tbsp cottage cheese |
2 tsp splenda |
Directions:
1. Preheat oven to 300 degrees 2. Spray a cookie sheet with cooking spray 3. Beat 1/4 cup of the egg substitute with the cream of tartar until the mixture is stiff, but not dry. 4. Fold the cottage cheese, Splenda, and remaining egg substitute into the cream of tartar mixture. Mix for no more than 1 minute. 5. Place mixture carefully onto the sheet, gently putting 1 tablespoon on top of another until each roll is about 2 inches high. Repeat until you have six piles. 6. Place the cookie sheet in the oven and bake for one hour at 300 degrees. |
