Diet Gourmet Crunchy Couscous Salad |

Another Houston Chronicle recipe 1/17/96. Diet Gourmet is restaurant/delivery svc. for healthy & good for your waistline food. I've never made this personally, but have had this from Diet Gourmet many times. If I'd only known I had the recipe all along. Ingredients:
1 c water |
3/4 t cinammon |
1/2 t ground ginger |
1/2 t cumin |
1/4 t turmeric |
1 t evoo |
1 c couscous |
1 granny smith apple finely diced |
1/4 cup fresh lemon juice |
1 c cooked chickpeas |
1/4 c chopped green onion |
1/4 c toasted sunflower seeds |
1/2 c currants |
1/2 t salt |
1/2 t white pepper |
Directions:
1. In large saucepan combine water, cinnamon, ginger, cumin, turmeric & half Tablespoon evoo. 2. Bring to a boil. 3. Slowly add couscous. 4. Stir 1 minute. 5. Cover & remove from heat. 6. Let stand 15 minutes. 7. Fluff with fork once couscous has cooled. 8. In large bowl, combine apple, lemon juice, remaining evoo, chickpeas, onion, seeds, currants, s&p. 9. Add couscous & toss gently to combine. |
