Dianne's Spicy Ginger Chicken Lettuce Wraps

Oriental Low Carb, Low Fat Dinner
Ingredients:
3 tbsp reduced sodium soy sauce
1 tbsp ginger root, grated
1 tsp splenda
1/8 tsp crushed red pepper
1 clove garlic
1 lb ground chicken
1/2 c celery, chopped
1/2 c water chestnuts, sliced
170 g lettuce (leaf lettuce)
Directions:
1. Combine soy sauce, ginger, crushed red pepper, and garlic; set aside
2. Heat a non-stick skillet over medium high heat until hot
3. Add chicken and cook 4 to 5 minutes or until no longer pink, breaking up pieces with side of spoon
4. Add celery to chicken in skillet and cook 2 minutes, stirring occasionally.
5. Add water chestnuts and soy sauce mixture; cook 1 minute to blend flavors.
6. Add dry roated peanuts, coarsely chopped if desired...adds cals, carbs and fat per peanut nutrition facts.
