Dianes Clam And Corn Chowder |

This is a chowder has a creamy texture but is chocked full of chunky potatoes and fresh corn. Ingredients:
4 slices crisp bacon, crumbled |
1 medium onion, chopped |
1/4 c butter |
2 cans (6-8 oz) chopped clams with liquor |
2 fresh steamed corns on the cob kernals removed |
3 c diced potatoes |
1/2 tsp salt or to taste |
1/4 tsp fresh ground pepper |
1 can cream of mushroom or celery soup |
1 can chicken broth |
2 c heavy cream |
1/4 c flour (i use wondra and i add more if needed for consistancy) |
Directions:
1. Saute chopped onion in butter. 2. Add everything else except flour. 3. In measuring cup, mix flour and a little warm water to dissolve. 4. Add roux to mixture and bring to boil. 5. Reduce heat, cover and simmer 30 minutes. 6. (For thicker chowder add addtional flour) |
