Once Nee found out she was diabetic, she started saving recipes. I found this one a few weeks ago in one of her cookbooks. Ingredients:
1 cup whole wheat flour |
1 1/2 teaspoons cinnamon |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/4 teaspoon nutmeg |
1 teaspoon ground cloves |
1 teaspoon allspice |
1 1/2 cups raisins |
1 cup unsweetened applesauce |
1/2 cup oil |
2 eggs |
1 teaspoon vanilla |
1/2 cup pecans, chopped |
1 cup quick-cooking oatmeal |
Directions:
1. Mix dry ingredients until well blended. 2. Add remaining ingredients to moisten, stirring well. 3. Drop by teaspoonful onto a lightly greased cookie sheet and bake at 375 degrees for 10-12 minutes. |
