My hubby loves gingersnaps, and I like them with Cream Cheese frosting on it. Ingredients:
2/3 c splenda |
2/3 unsalted butter |
3/4 sugar |
1/3 c molasses |
2 tbsp canola oil |
1/4 c egg substitute |
3-1/4 c all purpose flour |
2 tsp baking soda |
8 tsp ground ginger |
1/2 tsp ground cloves |
2 tsp cinnamon |
Directions:
1. Mix splenda, sugar, butter, molasses & oil together in a medium bowl 2. Mix on medium speed til creamy 3. Scrap sides of the bowl 4. Add egg & mix well 5. Add remaining ingredients and mix til blended 6. Divide dough in half 7. Roll into logs approx 1-1/2 inches wide & 14 inches long 8. Cover with plastic wrap & refrigerate for 3 hours or freeze for 1-1/2 hours or til firm 9. Preheat oven to 350 degrees. 10. Lightly oil cookie sheets 11. Slice cookies approx 1/4 inch thick 12. Place on prepared sheets 13. Bake 10-12 mins or til bottoms are lightly brown. |
