this is a diabetic bar recipe for my friends... now they can have a safe treat...the recipe is from a small pamphlet cookbook diabetic healthy snacks Ingredients:
1 cup flour |
1 cup whole wheat flour |
3/4 cup sugar |
1/2 cup finely chopped pecans or walnuts |
2 teasp. baking powder |
1 teasp. cinnamon |
1/2 teasp. baking soda |
1/2 teasp. salt |
1 (15-ounce) can pumpkin |
4 eggs slightly beaten or (1 cup frozen egg product, thawed) |
1/2 cup canola oil |
1/4 cup fat-free milk |
1/2 cup miniature semi-sweet chocolate chips |
Directions:
1. preheat oven to 350' F 2. lightly coat 15 x 10 x 1 inch baking pan with cooking spray 3. In large bowl combine flour, ww flour, sugar, pecans, baking powder, cinnamon, baking soda, and salt 4. in medium bowl combine pumpkin, eggs, oil and milk. 5. add pumpkin mixture and 1/3 cup of the chocolate chips to flour mixture. 6. stir until just combined 7. spread evenly in baking pan 8. sprinkle the remaining chocolate chips over the top 9. bake about 25 minutes or until a toothpick comes out clean 10. cool on a wire rack 11. cut into bars 12. ................................................................ 13. per serving: 90 cal. 14. 4 g total fat ...1 g sat. fat.... 0 mg chol 15. 77 mg sodium 16. 12 g carb 17. exchanges.... 1 carb, 18. 0.5 fat 19. carb choices...1 |
