I have not tried this recipe. I got this recipe from Obesity Help. Ingredients:
4 eggs |
2 tablespoons vanilla extract |
1 1/2 cups cooking oil |
3/4 cup frozen unsweetened apple juice (3/4 can concentrate-thawed) |
3 teaspoons cinnamon |
3 cups raw grated carrots |
2 teaspoons baking soda |
1 cup raisins |
1 teaspoon salt |
1 cup nuts, chopped |
2 cups all-purpose flour |
Directions:
1. Beat eggs and add oil. Sift together dry ingredients. Add to egg & oil mixture. Add vanilla & juice. Stir in carrots, raisins & 1/2 cup nuts. 2. Pour batter into greased cake pan and sprinkle 1/2 cup nuts on top. 3. Bake in preheated oven for 325 degrees for 40 to 45 minutes. |
