This is delicious and healthy. Ingredients:
1 cup yellow lentils (yellow split peas) |
2 tbsp oil |
1 onion, chopped |
3 gloves garlic, crushed |
1 inch ginger, grated |
1 tsp turmeric |
juice of one lemon |
1.5 litres vegetable stock |
sea salt to taste |
Directions:
1. To cut down on cooking time, soak lentils for a few hours ahead of time, but not necessary. 2. Saute onion, garlic, and ginger in oil for 5 minutes 3. Add turmeric and saute for 30 more seconds. 4. Combine all other ingredients in large pot 5. Bring to a boil, then simmer until lentils are very soft (45-60 mins) 6. Puree half the soup. |
