Wonderful rich flavour. Ingredients:
1 large onion, diced |
4 cloves garlic, minced |
1 teaspoon ground turmeric |
1 1/2 tsp ground cumin |
1 tbs ginger root, finely grated |
1/4 tsp ground cardamom (i use 3-4 whole cardamom pods) |
1 tsp cayenne pepper |
1 tsp salt |
1 cup red lentils |
3 cups hot water or broth |
2 tbs tomato paste |
1 large tomato |
juice of 1 lime |
handful chopped cilantro |
Directions:
1. Saute first group of ingredients until soft and fragrant. 2. Add second group of ingredients. 3. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender, about 45 minutes. Remove cover and simmer over very low heat, stirring frequently, about 30 more minutes, until lentils are mushy and thick. You may need to add up to 2 cups more water as the lentils need to be very thick and soft. 4. Just before serving add cilantro. 5. Serve over rice. |
