soupy stewed lentils in curry spices Ingredients:
200 g red lentils |
3 1/2 cups water |
1/2 tsp. turmeric |
1/2 tsp. fresh ginger |
1/2 tsp. salt |
1 tbsp. oil |
1 onion |
1 tsp. coriander |
1 tsp. cumin |
1/4 tsp. chilli powder |
1 tsp. olive oil |
Directions:
1. Bring lentils in water with turmeric and ginger to a boil. Lower heat and simmer for about an hour, or until mixture is thick and lentils very soft. When done cooking, stir in salt. 2. Gently saute onions in 1 tbsp. oil for 3-5 minutes, or until golden and soft. Add spices. 3. Add onions to lentils and stir gently to mix. 4. Stir in 1 tsp. olive oil. |
