1 small honeydew or spanish melon |
1 cup apple juice |
1 /4 - 1/2 cup sugar |
1 cup vodka |
6 sprigs of fresh mint |
2 cups crushed ice |
Directions:
1. Scoop the flesh from the melon and mash to a pulp. Measure 2 cupfuls. In a saucepan put the mashed melon, apple juice, and sugar (for a sweeter drink, use 1/2 cup sugar.) Bring to a boil, then simmer for 5 minutes, stirring frequently. Pour into a dish, cover and refrigerate until ready to serve. 2. Place the melon syrup in a blender container with the vodka, mint leaves and crushed ice. Cover and blend at high speed for 40 seconds. Serve in a tall flute champagne glass or dainty sherry glasses. The mixture will be like a soft sherbet, very easy to drink or sip through a straw. Makes about 4 cups, 6 to 8 aperitf servings. |
