Since we have our own chickens, we're always trying out new egg dishes. Here's the latest, just in time for Easter! Ingredients:
6 hard-boiled eggs, cut in half |
2 tablespoons green olives, chopped |
1 tablespoon capers, drained and chopped |
1/4 cup mayonnaise |
3 -4 dashes tabasco sauce |
1 tablespoon fresh parsley leaves, minced |
1 tablespoon fresh dill, minced |
salt and pepper |
Directions:
1. Mash the egg yolks well in a bowl. 2. Add the olives and stir in the mayonnaise. 3. Add Tabasco, salt and pepper. 4. Pipe the mixture into the whites and sprinkle with the parsley and dill. |
