Deviled Eggs Potato Salad |

I love this salad and in fact when I make it I can never get enough. I have been asked to bring this to pot lucks on several occasions and everyone loves it. Nice combination of herbs and spices. Yummers Ingredients:
9 hard boiled eggs peeled |
1/2 cup chopped red onions |
1/4 cup shredded pimentos |
1/4 cup shredded green pepper |
1/2 cup mustard |
1 tablespoon salt |
6 cups boiled potatoes cubed |
1/2 cup shredded dill pickles |
1/4 cup shredded celery |
1 cup mayonnaise |
1 tablespoon paprika |
Directions:
1. Cut 6 eggs in half and remove yolk. 2. Place yolks in bowl and mix with 1 teaspoon pickles, 1 teaspoon mustard, 1 tablespoon mayonnaise, dash of salt. 3. Stuff eggs with the yolk mixture then set aside. 4. Mix potatoes with remaining ingredients. 5. Add eggs flaked with fork last. 6. Top with paprika and arrange deviled eggs around top of salad for decorative look. |
