Ingredients:
1 dozen hard-cooked eggs |
1/2 cup mayonnaise |
1 tablespoon minced onion |
2 teaspoons prepared mustard |
1/4 teaspoon salt |
dash of pepper |
paprika |
12 slices pimiento-stuffed olives |
shredded lettuce |
Directions:
1. Cut eggs in half lengthwise; remove yolks. Mash yolks; stir in next 5 ingredients. 2. Generously spoon yolk mixture over cut side of 12 egg white halves. Top with remaining egg white halves, cut side down; press gently. Sprinkle with paprika, and garnish with olive slices. Serve on shredded lettuce. |
