Simple appetizer dish, top off the egg with anything you'd like. I always make this for annual pot luck at work. Ingredients:
dozen large hard boiled eggs |
1 cup mayonnaise |
1 tablespoon dijon mustard |
cocktail small shrimp - tail off |
small grape tomatoes - sliced |
black olives - sliced |
parsley - chopped (enough to garnish) |
paprika, salt, pepper |
you could change the toppings, to anything you'd like |
for example instead of the black olives and tomatoes, i have used shrimp and black caviar with great results. |
Directions:
1. Hard Boil dozen eggs (best to use 3-5 days old eggs, easier too peel) 2. Cut each egg in half lengthwise, separating yolks from the egg whites. 3. Chop 4 of the halves of the egg white into small bits and 4. Place the chopped egg whites and yolks in large zip lock bag and combine the mayonnaise, Dijon mustard and salt and pepper to taste. Mash them all together and make sure the yolk is broken down and mixed well with the ingredients. 5. Snip a corner bottom of the zip lock bag to squeeze the mixed yolks onto the egg whites. 6. Add shrimp, black olives, grape tomato slices. (or any other topping). 7. Garnish with parsley and paprika. 8. Makes about 20 halves. |
