A tasty summer picnic food to go along with all those veggies. Adapted from Joy of Cooking. olive oil, chicken wings, honey, Dijon mustard, cider vinegar, whole wheat bread crumbs or flour, dried thyme, ground red pepper cvt Ingredients:
2 tbs. olive oil |
255 g (1 package=20 ounces raw =7 1/2 wings ) chicken wings |
1/2 cup honey |
30 g (2 tbs.) dijon mustard |
1 tbs. cider vinegar |
72 g (2/3 cup) whole wheat bread crumbs or flour |
1 tsp. dried thyme |
1/2 tsp. ground red pepper |
Directions:
1. Preheat the oven to 400 °. Grease a large baking sheet with the oil. Remove and discard wing tips from chicken wings. Separate each wing into 2 pieces at the joint. 2. Stir together the honey, mustard, and cider vinegar together in a large bowl. Combine bread crumbs or flour, thyme, and ground red pepper on a plate. 3. Toss the wings in the honey mixture. Add one at a time to the crumb mixture and turn to coat completely, shaking off the excess. 4. Spread the wings on the prepared baking sheet. Bake, shaking the pan twice during the cooking or turning the wings with tongs, until the wings are well browned and crispy, 20-30 min. 5. These can be served warm or refrigerated and travel well on picnics. |
