1 teaspoon butter, softened |
1 teaspoon cider vinegar |
1 teaspoon prepared mustard |
1 teaspoon paprika |
1 dash pepper |
2 boneless skinless chicken thighs (about 1/2 lb) |
3 tablespoons soft breadcrumbs |
2 tablespoons chopped cashews |
Directions:
1. In a large bowl, combine the butter, vinegar, mustard, paprika and pepper. 2. Spread over chicken thighs. 3. Place in a greased 11x7 baking dish. 4. Sprinkle with bread crumbs. 5. Bake, uncovered, at 400 for 15 minutes. 6. Sprinkle with the cashews. 7. Bake 7-12 minutes longer or until chicken juices run clear and topping is golden brown. |
