Light, refreshing dessert in minutes!Angel food cake filled with layers of ice cream & topped with swirls of whipped cream. Eat now or freeze for a special occasion Ingredients:
10 in. angel food cake |
1 quart stawberry ice cream,softened |
2 cups peach ice cream,softened |
2 cups heavy cream |
1/2 cup confectioner's sugar |
1/2 tsp. almond extract |
2 kiwi fruit,sliced |
6 whole srawberries |
Directions:
1. Freeze store-wrapped cake until firm-2 hours or overnight 2. remove from freezer and unwrap 3. Insert wooden picks into cake into four layers. 4. Using a large serrated knife, slice cake horizontally into four layers 5. On a large flat plate or a small wooden board, place bottom layer of cake. 6. Using a rubber spatula,spread with 2 cups strawberry ice cream, just to edge of the cake 7. Top with second cake layer;spread with peach ice cream 8. Top with third cake layer; spread with remaining strawberry ice cream 9. Top with 4th layer, aligning cake layers 10. Wrap in plasic wrap or freezer wrap 11. Freeze overnight or several hours until cake is very firm 12. About 1 hour before serving cake; in the chilled bowl of an electric mixer, combine heavy cream, confectioner's sugar and almond extract 13. At high speed,beat until stiff peaks form when beater is raised 14. Unwrap fozen cake and transfer to a serving plate 15. Spread about 3/4's of whipped cream on top and side of cake 16. Fill pastry bag fitted with a 1/2 in. star tip with remaining whipped cream. 17. Pipe rosettes of cream decoratively on top of cake. 18. Garnish with fruit just before cutting into wedges to serve 19. Makes 12 servings |
