This is definitely a dessert version, and not the form Mom usually made. From Mom's notebooks. (Mom says this was her paternal grandmother's version.) Ingredients:
1/8 lb butter (1/2 stick) |
1/3 cup sugar |
3 eggs, separated |
1 dash salt |
1/8 teaspoon cinnamon |
1/2 teaspoon vanilla extract |
1/2 teaspoon lemon juice |
1 lb cottage cheese or 1 lb pot cheese |
8 ounces wide egg noodles, cooked and cooled in ice water |
1/2 cup golden raisin |
Directions:
1. Preheat oven to 350°F. 2. Cream butter and sugar together with hand mixer or stand mixer. Add egg yolks, salt, cinnamon, vanilla, lemon juice and cottage cheese. Blend well. 3. Stir in well-drained noodles and raisins. 4. Beat egg whites to stiff peaks. Fold into noodle mixture. 5. Pour into buttered baking dish. Bake 45 minute Serve warm. |
