After dinner, nibble on this light, sweet treat instead of a heavy dessert. So easy to make as well Ingredients:
2 lb seedless grapes - use both red & green |
1 lb premium white chocolate |
2 cups finely chopped honey roasted cashews |
Directions:
1. Wash grapes well under running water in a colander & let drain well. 2. Cut grapes into clusters of 3 grapes with kitchen shears. 3. Place on layers of kitchen towels & sit at room temperature to dry completely. - You don't want to get any water in the chocolate. 4. Place chocolate on a cutting board & coursely chop into small uniform pieces with a knife. 5. To melt chocolate, fill bottom of double boiler with water to 1 inch below the level of the top pan. 6. Bring water just to the boil & then reduce to low. 7. Place chocolate in the top pan. 8. To prevent steam from getting on chocolate, cover before placing over hot, not boiling water. 9. Uncover & stir until the chocolate is melted. 10. Place cashews in a shallow bowl. 11. Working with one cluster of grapes at a time, holding the stem, dip grapes into the melted chocolate, leaving part of the grape uncoated. 12. Allow excess to drip off back into the pan. 13. Roll grapes gently in the cashews & place stem side up on wax paper. 14. Repeat with remaining clusters. 15. Refrigerate until chocolate is firm. 16. Serve with in 4 hours |
