I just came across this in a cookbook, so have not tried it yet. I did not see anything like it on the site so decided to share. You can use this with pork chops, chicken, fish or veggies (broccoli & cauliflower). I am posting the recipe as it is in the book, but think I will cut the salt in half for sure. You can add some parmesan cheese to this as well. Store it in an airtight container in a cool, dark place for up to 2 months.
Ingredients:
1 1/2 cups dried breadcrumbs (plain, unseasoned)
2 tablespoons salt
2 tablespoons dried thyme
1 tablespoon dried oregano
1 tablespoon dried sage
1 tablespoon paprika
1 1/2 teaspoons freshly ground black pepper
Directions:
1. Mix together until well blended.
2. Store tightly covered in a cool dark place.
3. To coat meats for baking, mix 1/2 cup of breading with 1 tsp vegetable oil.
4. Spread crumbs on plate and press onto both sides of meat or fish.
5. Bake until coating is golden, and meat or fish is cooked through.
6. To coat broccoli and cauliflower, par boil veggies, drain & cool completely.
7. Mix 1/2 cup breading with 2 Tbsp grated parmesan & 2 Tbsp melted butter.
8. Toss veggies in crumbs, spread on parchment lined baking sheet.
9. Bake at 400° about 12 minutes, serve hot, warm or at room temperature.
