1/4 cup dry breadcrumbs |
1 tablespoon grated parmesan cheese |
1 teaspoon paprika |
1 teaspoon dried thyme |
1/2 teaspoon garlic salt |
1/4 teaspoon ground red pepper |
1/3 cup low-fat buttermilk |
4 (6-ounce) skinned chicken breast halves |
cooking spray |
1 tablespoon stick margarine or butter, melted |
Directions:
1. Preheat oven to 400°. 2. Combine first 6 ingredients in a shallow dish. Place buttermilk in a shallow dish. Dip chicken in buttermilk; dredge in breadcrumb mixture. Place chicken, breast sides up, in a jelly-roll pan coated with cooking spray. Drizzle margarine over chicken. Bake at 400° for 40 minutes or until done. |
