baked fresh fruits,with couscous soaked in honey and lemon juice and sprinkled with toasted pistachios Ingredients:
2 large plums diced |
1 large apple peeled.cored and diced |
2 medium peaches diced |
1 cup diced cantaloupe |
2/3 cup sultanas or raisins |
2 tablespoons lemon juice |
1.2 cup meleted good quality honey |
3 tablesppons melted butter |
1.5 teapoons ground cinammon |
1/2 cup couscous |
3-4 tablespoons crushed pistachios |
Directions:
1. combine plums,apple,peaches,cantaloupe,sulatana,lemon juice and honely. put in a deep skillet cover with lid and cook over low heat for 10 minutes.. add coucous,cinammon and butter, continue cokking over low heat, stirring gently till coucous is cooked ( 3-5 minutes roughly. 2. pour mix in a serving dish and allow to cool for 1 hour. sprinkle with pistachios.....enough for 8 servings.. |
