The great thing about Frittatas is that you can use practically anything to fill them. One of my favorites is ingredients used for a Denver omelette. Can be served for breakfast or even along side a green salad or home fried potatoes and served for supper. Ingredients:
8 eggs |
1/4 c half and half |
1 tbsp butter |
1 cup cheddar cheese, shredded |
1 small green pepper, diced |
1 sm onion, diced |
1/2 cup ham, diced |
salt and pepper to taste |
Directions:
1. Preheat oven to broil 2. Spray 10 inch non-stick skillet with cooking spray (If pan is not oven proof, cover handle with foil) 3. Over medium heat, melt butter and add peppers and onions 4. Saute until tender crisp 5. Add ham to heat through 6. In mixing bowl, whisk eggs, half and half, 1/2 cup cheese, salt and pepper 7. Lower heat to low 8. Pour egg mixture into skilletĀ·over veggies and ham 9. Place lid on pan 10. Cook for 6-8 minutes 11. Remove cover and sprinkle remaining cheese over top 12. Place under broil until cheese melts 13. Remove from oven 14. Slide frittata onto serving plate and cut into wedges |
