Perfect for breakfast for brunch. Ingredients:
1 tbsp butter |
1 small onion, chopped |
1 small green pepper, cored, seeded and chopped |
1 small red sweet pepper, cored, seeded and chopped |
8 eggs |
1/4 cup milk |
3/4 cup shredded cheddar cheese |
2 slices ham (2 oz) cut into thin ribbons, about 1/2 cup |
1/4 tsp salt |
1/4 tsp black pepper |
Directions:
1. . Heat oven to 350. Coat a 10-inch nonstick skillet (with oven proof handle) with cooking spray. 2. 2. Heat butter in skillet over medium heat. Add onion and pepper and cook for 5 minutes, stirring occasionally. 3. 3. In a large bowl, whisk together eggs, milk, 1/2 cup of the cheese, ham, salt and pepper. Pour mixture into skillet and stir to combine. Cook over medium-low heat for 5 minutes. Stir gently halfway through cooking. 4. 4. Sprinkle remaining 1/4 cup of the cheese on top. Place skillet in oven; bake at 350 for 15 minutes. 5. 5. Remove from oven. To serve, gently slide frittata onto serving plate and cut into 8 wedges. |
