Beans and veggies with a balsamic kick. Great side dish for BBQ's Ingredients:
1 large shallot, diced |
1 red pepper, diced small |
1 cup frozen corn, thawed |
1 cup frozen peas, thawed |
1 cup frozen lima beans, thawed |
1 can cannelini beans, drained |
1 can black beans, drained |
1 cup vegetable stock |
1 can diced tomatoes |
1/2 teaspoon each, rosemary, thyme, sage |
1 tablespoon butter |
1/4 cup balsamic vinegar |
1/4 cup white wine |
1/8 cup lemon juice |
salt and pepper, to taste |
Directions:
1. In a medium size sauce pot, over medium heat, cook shallots, pepper, peas, and corn, stirring until shallots are translucent. 2. Add herbs, lima beans and vegetable stock, and white wine. 3. Raise heat and bring liquid to a boil. Simmer liquid to reduce by half, about 10 minutes. Add tomatoes, black beans, and white beans and heat through. 4. Add butter, lemon juice, balsamic vinegar, and salt and pepper to taste. |
