This comes from my Easy Gourmet cookbook. I have not tried it yet. If you try it, I hope you enjoy it. Ingredients:
1/2 cup almonds, slivered and blanched |
2 tablespoons butter |
2 2/3 cups water |
1/2 cup dried cranberries |
1 teaspoon salt |
2 2/3 cups quick-cooking rice |
Directions:
1. In a large saucepan saute almonds in the butter until golden brown. 2. Add the water, cranberries and salt. 3. Bring to a boil. 4. Stir in the rice, remove from the heat and let stand, covered for 5 minutes. 5. Fluff with a fork and serve. |
