So easy because it starts with a mix, but excellent. Ingredients:
2 (7 1/2 ounce) packages corn muffin mix |
1 (14 ounce) can creamed corn |
1/2 cup milk |
2 eggs, lightly beaten |
1 cup grated cheddar cheese |
1 jalapeno pepper, seeded, chopped fine |
Directions:
1. Combine muffin mixes with corn, milk and eggs. 2. Stir in any optional additional ingredients if desired. 3. Fill greased muffin tins 3/4 full. 4. Bake in a preheated 400°F oven for 20 minutes or until a tester comes out clean. |
