This recipe was made famous at delmonco's the first full service restaurant in the United states which was in New York city and also made famous for their steaks. Ingredients:
6 medium potatoes, cooked and diced |
1 3/4 cups light cream |
3/4 cup grated cheddar cheese |
1/2 cup buttered bread crumb |
4 tablespoons butter |
4 tablespoons flour |
salt and pepper |
Directions:
1. Boil potatoes in lightly salted water until almost done. Drain, peel. and dice. Place in a buttered baking dish. Combine flour and butter in a saucepan over a low heat. Mix into a roux. Slowly add cream, stirring constantly. Simmer until thickened. Season with salt and pepper. Pour over potatoes, toss to coat. Cover with cheddar cheese and sprinkle with bread crumbs. Bake at 400 degrees F. (205 degrees C.) until cheese is golden brown. |
