My baking freezer ( I have a small freezer just for my baked goods! ) being empty after holiday season, gives me a chance to use leftovers and fill my freezer again with all sorts of goodies I use for company, family and friends, home made baked gifts etc. Read more . This is a recipe that popped in my head that I should use the blender for the oranges. I also did not want to add any nuts or raisins, spices etc as I wanted a simple but delcious loaf with great taste and beautiful color that would be suitable for breakfast, brunch, served with fruit salad or tea or coffee time. It turned out great with great flavor, texture and color I hope you enjoy it! Ingredients:
3 large naval oranges |
grated rind from the 3 naval oranges |
3 lg eggs |
1 stick butter or margarine melted |
1 tsp citrus blend oil or orange oil ( see note ) |
3 cups flour |
1 cup sugar |
1 tsp baking soda |
1 tsp baking powder |
good pinch salt |
Directions:
1. Wash oranges and dry, 2. Grate rind from all 3 oranges into a small dish 3. Peel oranges , discard peel and cut up oranges into chunks 4. Place the fresh orange chunks in a blender with 3 eggs and blend smooth 5. There should be almost 3 cups total liquid if one uses large naval oranges 6. Into a bowl combine the flour, baking powder, baking soda and salt 7. Place orange liquid into drys along with the melted margarine and citrus oil 8. With electric mixer at medium speed mix all till well blended. 9. Pour mixture into and greased and floured large 9 x 13 loaf pan. 10. Bake in a 325F oven about 60 to 70 minutes or tested done in center with a toothpick 11. Cool on rack completely 12. May serve and cut when warm along with cream cheese and or softened butter on the side 13. Or, wrap in foil and store overnight for flavors to mellow longer 14. Freezes well 15. Note: citrus oil or emulsions can be purchased online , or from baking supply catalogs, etc. These oils add a burst of flavor to ones baked goods. 16. Although plain vanilla or even orange extract can be used in the recipe, with excellent results , the citrus oil are more potent and definetly add a little something extra to your recipes! |
