A healthy, colorful and delicious salad which may be varied to your liking with additions of dried fruit, chopped nuts, chopped herbs, different spices and sweeteners and oils. Such a nice way to serve rice Ingredients:
4 cups cooked browned rice |
1 tbs chopped red onion |
2 tbs chopped celery |
1 apple chopped- some red skin on |
2 tbs chopped almonds |
2 tbs chopped fresh parsley |
1 tsp curry powder |
1 /4 tsp cinnamon |
bit of sweetener to taste ( example: honey, sugar, splenda) |
salt and pepper to taste |
extra virgin olive oil to taste |
Directions:
1. Mix all and serve 2. If chilled, bring to room temp and stir |
