So Easter is over and we boiled over 24 eggs - now what to do with them all?! This combo turned out SO good they were all gone in a matter of minutes! I love seeing everyone's reaction taking that first bite! MMMMMMMmmmmmmmmmmmm! Read more !! Ingredients:
a dozen hard boiled large eggs |
1/4 cup red onion, minced real fine |
1/4 cup cucumber, finely chopped |
1/2 cup mayo |
1/4 cup dijon mustard |
dash salt |
dash pepper |
papricka |
green onion chopped for garnish |
Directions:
1. Slice eggs lengthwise and remove yolks. 2. In a large bowl mix yolks, onion, cucumber, mayo, mustard, salt and pepper. 3. Spoon filling into egg white halves. 4. Sprinkle tops with papricka. 5. Garnish with green onion. 6. Yum! |
