Delicious Zucchini & Rice |

My husband isn't a fan of zucchini and this is how I got him to eat it. I've also made this recipe with added beans, chicken, sausage or spinach and sometimes I spice it up. So go ahead and play around! Ingredients:
2 cups water |
1 cup long grain rice |
3 tablespoons olive oil |
1 large onion, chopped |
1 red bell pepper, chopped |
3 garlic cloves, crushed |
1 (14 1/2 ounce) can whole canned tomatoes, chopped |
3 cups finely chopped zucchini |
1/2 teaspoon dried oregano |
salt and pepper |
Directions:
1. Cook rice according to package. 2. In a separate saucepan, heat oil over medium heat. Sauté onion, red pepper and garlic until tender. 3. Add tomatoes and zucchini and season with salt, pepper and oregano. 4. Reduce heat, cover and simmer 20 minutes, stirring occasionally. 5. Serve zucchini mixture over the rice. |
