Delicious Walnut Cookies Vegan/Vegetarian/No Eggs |

This is a wonderful recipe that I got from Let's Cook Together on 3ABN. I was surprised at how good these cookies are AND without the use of milk, butter or eggs! And my 4 year old loves them!! Ingredients:
2 1/4 cups unbleached white flour |
1/4 cup wheat germ |
3/4 cup turbinado sugar |
1/2 cup soymilk powder |
1/2 cup lecithin granules |
1/2 teaspoon sea salt |
1 tablespoon baking powder |
1 cup chopped walnuts |
1/2 cup soymilk |
1/2 cup canola oil (or you can substitute with 1/2 cup apple sauce to cut down on fat, though i haven't tried it this wa) |
1 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350 degrees. 2. Mix all dry ingredients (the first eight ingredients) in a large mixing bowl. 3. Add wet ingredients (the last three ingredients) and mix with your hands until you form a very thick batter. 4. Roll about a tablespoonful of batter in your hands and then gently pat down to form a cookie. Makes approximately 24 cookies. 5. Place your cookies on a non-stick cookie sheet and gently pat down again until cookies are the shape and size you want them. These cookies do not expand much, but they do rise slightly, so what you see when you put it in the oven won't be much different than the finished product. 6. Bake for approximately 6-9 minutes depending on your oven and check them to make sure they are not burning. 7. Take cookies out and flip them and put them back in the oven for another 2-3 minutes until golden on both sides. 8. Cool on a rack and enjoy! |
