Delicious Turkey (Meat) Loaf |

This turkey loaf looks like a meatloaf but really should be described all on its own! I used my favourite meatloaf recipe and then got creative. I hope your family enjoys this as much as mine did tonight! The next time I make this I will double the recipe to freeze one for later. Ingredients:
1 medium onion, chopped |
2 teaspoons garlic, minced |
2 tablespoons olive oil |
2 lbs lean ground turkey |
1 large egg |
2 teaspoons worcestershire sauce |
1/2 cup ketchup, divided |
1/2 teaspoon salt |
1/2 teaspoon ground black pepper |
1/4 teaspoon chili pepper |
5 teaspoons dried parsley |
1/4 teaspoon cumin |
1 (6 ounce) can tomato paste |
12 saltine crackers, crushed |
20 vegetable crackers, crushed (i used kraft vegetable thins) |
Directions:
1. Preheat the oven to 400 degrees F. 2. In a medium sized skillet, warm the oil and add in the garlic and onions. Saute until the onions appear clear. Set aside. 3. In a large bowl combine the remaining ingredients, setting aside one of the 1/4 cups of ketchup. Mix just until well combined. Add in the sauteed onions and garlic. Mix. 4. Transfer the mixture to a loaf pan and brush the top with the remaining ketchup. 5. Bake for about 50 - 55 minutes or until an instant-read thermometer registers 160 degrees.F. 6. Remove from the oven and let rest for 10 to15 minutes before slicing. |
