I got this recipe from my boyfriends mother after she made it at a family gathering and it is absolutely delicious and very simple to make. I usually mix all the ingredients together at once and keep it in the fridge to eat over a few days time. Ingredients:
1 (15 ounce) can black beans (or black eyed peas) |
1 (15 1/2 ounce) can hominy (yellow) |
1 yellow onions or 1 bunch green onion, chopped |
1 green pepper, diced |
1 -2 jalapeno, seeded and diced |
3 -4 tomatoes, diced |
1 -2 garlic clove |
1 (6 ounce) bottle wishbone italian fat-free salad dressing |
1/2 cup cilantro, chopped |
Directions:
1. Mix all ingredients in a bowl and marinate 12-24 hours. 2. If preparing further ahead, reserve 1/2 of tomatoes until just before serving. |
