Delicious Spinach With Shallots |

I have served this to many spinach haters (or those who barely liked it) and they all thought this one got 2 thumbs up. It's probably the only way we eat spinach in our house other than the occasional spinach salad. The balsamic vinegar is optional but I love the taste it brings to the finished products. Ingredients:
1 tablespoon olive oil |
1 shallot, diced |
2 garlic cloves (or to taste) |
1 (10 ounce) bag baby spinach leaves (i use way more) |
1/2 teaspoon kosher salt (to taste) |
1/2 teaspoon pepper, freshly ground (add to taste) |
2 teaspoons balsamic vinegar (optional, add to taste. i use more) |
Directions:
1. In a large skillet, heat olive oil over medium heat. Stir in shallots and garlic and cook until transparent, about 5 minutes. 2. Add spinach, sprinkle with salt and pepper; cook and stir 3 to 5 minutes until leaves are wilted and reduced. If using balsamic vinegar, add it in during the 3-5 minute cooking timeframe. |
