Delicious Sauteed Beet Greens |

I made beet borscht and I decided to saute the greens. This came out so good, we polished it all off for lunch. Ingredients:
cococnut , peanut or olive oil |
1 bunch of leafy beet greens coarse chopped |
1 large sweet onion |
1 large garlic clove |
2 beef frankfurters cut into rounds or a few slices up cut up bacon |
salt and pepper |
Directions:
1. Saute the chopped onions in some hot oil. 2. Add the garlic and cook a minute or so 3. The coconut or peanut olive imparts good flavor. 4. Add and brown the hotdogs a bit ( or bacon ) 5. Finally add the coarse chopped beeet greens and saute till wilted and tender. 6. This takes only a few minutes. 7. Salt and pepper to taste 8. serves 2 to 3 |
