These cookies are delicious! Rice Krispies cereal, oats, coconut, brown sugar combine to make these one of those you-can't-eat-just-one cookie. So very good!
Ingredients:
1 cup crisco shortening
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 cups rice krispies cereal
2 cups oats
1 cup coconut
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon soda
1-1/2 cups flour
Directions:
1. In large bowl, cream shortening and sugars
2. Add eggs one at a time, beating a couple of seconds after each addition
3. Mix remaining ingredients *except* flour in a bowl
4. Add these ingredients to sugar, shortening, egg mixture
5. Mix well with wooden spoon
6. THEN add as much of the 1-1/2 cups flour as needed to make stiff dough
7. Drop by rounded teaspoons (or cookie scoop), onto greased cookie sheet
8. Bake at 375 degrees until light brown, about 12 minutes
9. Please do not overbake
10. Remove from pan with a spatula
11. Cool on wire rack
