This came from a mother of a student I taught years ago...her name is Billie Jane Wheatley. This recipe makes great llittle tea sandwiches or can be spread on your choice of crackers. I often use low-fat sour cream and the 1/3 less fat cream cheese to make it healthier. Either way this is a treat! Note: Cooking time is just to melt the butter, sour cream, and cream cheese together.
Ingredients:
1 (1/4 ounce) package gelatin
1/4 cup water
1/2 cup butter, softened
4 ounces sour cream, softened
2 (8 ounce) blocks cream cheese, softened
1/2 cup sugar
1/2 cup chopped pecans
1 cup white raisins
Directions:
1. Add gelatin to the water and allow to thicken.
2. In a medium saucepan over medium heat, melt together the butter, sour cream, and cream cheese. Stir until smooth. Remove from heat.
3. Add gelatin to this mixture and stir to incorporate.
4. Add sugar, nuts, and raisins. Stir well to blend all ingredients.
5. Put in your choice of mold and refrigerate overnight.
6. Serve on crackers or make little tea sandwiches.
