another Amish recipe Ingredients:
1 2/3 cups flour |
1/4 teaspoon baking powder |
1 teaspoon baking soda |
3/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/3 cup shortening |
1 1/3 cups sugar |
1/2 teaspoon vanilla |
2 eggs |
1 cup mashed pumpkin |
1/3 cup water |
1/2 cup chopped walnuts or 1/2 cup pecans |
Directions:
1. Grease regular loaf pan. 2. Sift dry ingredients together. 3. Cream shortening, sugar and vanilla. 4. Add eggs one at a time. 5. Beat thoroughly after each addition. 6. Stir in pumpkin. 7. Add dry ingredients alternately with the water, beating until mixture is smooth. 8. DO NOT OVERBEAT. 9. Fold in nuts. 10. Pour into loaf pan and bake 350F for 45-55 mins or until done. 11. Turn bread onto wire rack to cool, before storing in an airtight container. 12. Slice and serve with butter if desired. |
