Onion rings make not only a great side, but they are perfect for parties as well. The lowly onion, long underestimated, rises to glory with this recipe! Ingredients:
2 eggs beaten |
1 pt milk |
10 oz cake flour |
2 tsp baking powder |
1/2 tsp salt |
1/2 tsp garlic powder (not garlic salt!) |
1 oz parsley flakes |
1/2 tsp paprika (optional: for added color) |
3 lb onions -- large |
as needed --- flour |
Directions:
1. Combine the eggs and milk in a bowl. 2. Mix the flour, baking powder, salt, garlic powder, parsley flakes,and paprika together and add to the milk. 3. Mix well. 4. The batter should have the consistency of a thin pancake batter. 5. Peel the onions and cut crosswise into 1/4 inch slices. 6. Separate into rings (save unusable pieces for another purpose). 7. Place the onions in cold water if they are not used immediately to maintain crispness. 8. Drain and dry the onions thoroughly. 9. Dredge with flour and shake off excess. (This step isn't always necessary, but it helps the batter adhere.) 10. Dip a few pieces at a time in the batter and fry in deep fat (350°F) until golden brown. This only take a minute or two. 11. Drain and serve immediately. 12. ______________________ 13. Note: 14. There are some variations listed below you might also enjoy! 15. Beer Batter 16. Substitute light beer for the milk. 17. Omit baking powder because the carbonation of the beer acts as a leavener. 18. Buttermilk Batter 19. Substitute buttermilk for the milk and use 1 tsp baking soda instead of the 2 tsp baking powder. 20. Other Fried Vegetables: 21.
