This is a very delicious savory spread for crackers or bread. My favorite is to put it on a crusty whole wheat baguette. People love it. Ingredients:
2 cups kalmata olives, drained and pitted |
1 cup large green greek olives (any variety, with or without pimento) |
garlic - lots! (i use about five large cloves, you can use less as it can be pretty overpowering) |
appx. 1/4 cup olive oil |
appx. 1/3 cup balsamic vinegar |
Directions:
1. Place garlic and olives in food processor and blend until almost smooth. 2. Slowly stream in olive oil and balsamic vinegar, until the desired consistency is reached. It should be about the consistency of guacamole, thick enough to scoop. 3. Serve with crusty bread or crackers and enjoy! |
